Good, but expensive. You're right. Go to the area of Germany. You can even get some "budget" that things like Wusthof last forever if you care for him. Do not go for the hype of names, either. A sharp knife will not stay forever. And never buy a knife that never needs of shaarpening '.. what it really means is' this knife can not be sharpened. Serrated blades tear the food, which do not cut it. Best bang for the buck? Learn to use a steel and may have knives professionally sharpened once a year. The steel is kept up. Now they depend on the $ 10 meat and $ 5 knives to peel daily use. The stores them in cooking, tune once and then use steel when necessary. You can put a blade of a knife in 10-15 seconds .. send it once a year. I'll get 10-15 years out of a few decent knives .. But for $ 10 who cares? LOL
