Knife that can cut through bone?
I am on a semi-frequent basis buying pork spare ribs that have a bone going accross the back of the meat the I need to be able to cut. Have any suggestions?
The bone going perpendicular to the ribs is spinal column, which isn't a solid bone, but number of vertebrae connected by ligaments, tendons and muscle.
The point is that you can separate those ribs without ever touching the bone itself. I used ot use hatchet to chopt hrough the spinal solumn to separate the ribs too. Later I've learned how to work through the vertebrae with the knife. For now I use heavier Deba type knives for the job, but the same can be fone with a boning knife.

As for the Chinese cleaver. its primary designation is vegetables, not heavy duty chopping. People often mistake chinece cleavers, aka. Chuka Bocho for the western meat cleavers, because of the similar blade geometry.
Simply put, chinese cleaver is for veggies, thin blade, thin edge. However, they do make "chopper" versions of it, but frankly, I have not seen them in any local store and I worked with several Japanese knifemakers on various knife projects, and they do not make cleavers for bone chopping unless specifically asked.
So, if you need a bone chopper, get an average western meat cleaver. Those are pretty cheap. For the ribs you can get away without meat cleaver, as long as you learn how to work between the vertebrae. Otherwise, cleaver will do
