Ingredients:

Ingredients:

4 Medium sweet potatoes, peeled and cut each lengthwise into 8 pieces
2 tablespoons vegetable oil
Coarse salt
Freshly ground black pepper

Preparation:

1. Preheat the oven to 375 F.

2. Add wedges of sweet potato in a small bowl. Mix with vegetable oil to coat.

3. Square corners potato on a baking sheet covered with foil.

4. Season to taste with salt and freshly ground black pepper.

5. Roast in preheated oven for half an hour, turning once.

6. Potatoes should be slightly browned and tender.
